Dished up this wonderful salad today. And just in case you’re interested, here’s the recipe:
Salad Ingredients: Rocket, Morning Glory, Romaine Lettuce, Iceberg Lettuce, Walnuts, Black olives, Tomatoes, Cucumber, Carrots, Sun-dried Tomatoes (soaked in olive oil). Blanched Brocolli & Baby Corn. Feta Cheese.
Tip – Don’t chop the Cucumber & Carrots. Using a peeler, peel lengthwise strips off the sides. This will mix well and taste very good!
Taste Tip – Throw in a few grapes or pieces of orange to add a sweet-sour flavour.
Dressing:3 Tbl Spoons olive oil, 1 Tbl Spoon balsamic vinegar (you can also use lime juice for a slightly different flavour), salt & pepper – to taste, black and white pepper corns (5 each – rubbed in your palms for about a minute, to release the fragrance), finely chopped garlic (1 pod), pinch of sugar, oregano, rosemary.
Combine all the dressing ingredients and give them a good shake. Pour over the salad. Mix. Enjoy. Send me positive vibes! 🙂
